1½ cupsself-raising flouror plain flour with 1½ tsp baking powder

1/3cupmilk
1/3cupcoconut milk
1egg
Roughly ground cardamom

Instructions
Prepare the batter:
In a bowl mix flour, sugar, cardamom, milk, coconut milk, and egg to make a thick batter.
Cover and let it rest for about 1 hour.
Check batter consistency:
The batter should be thick enough to coat the banana pieces completely.
If too thin, add a little flour.
If too thick, add a small amount of milk.
Prepare the plantains:
Peel the plantains and cut them into 3–4 pieces.
Slice each piece lengthwise into 2–3 thinner pieces.
Fry the fritters:
Heat oil in a deep pan.
Dip each plantain slice into the batter, ensuring it is fully coated, then carefully place it in the hot oil.
Cook until golden:
Fry on medium heat until the fritters turn golden brown and crispy.
Remove and place on paper towels to drain excess oil.
