Dates & Coconut Rolls

A naturally sweet, no-bake dessert made with soft dates, coconut, and cardamom, perfect as a healthy festive or iftar treat.

Ingredients
  

  • 1 cup seedless dates chopped (200 g)
  • 1 cup coconut desiccated (80 g)
  • 1 tbsp milk
  • 1 tbsp ghee
  • 1/4 tsp cardamom powder
  • 2 tbsp chopped nuts (almonds or pistachios, optional)

Instructions
 

Heat the pan:

  • Place a pan on low heat and add ghee.

Cook the dates:

  • Add chopped dates and milk.
  • Cook while mashing until the dates become soft and sticky.

Add coconut and flavour:

  • Add 1/2 cup desiccated coconut, cardamom powder, and chopped nuts if using.
  • Mix well.

Cook the mixture:

  • Continue cooking until the mixture thickens and starts leaving the sides of the pan.

Shape the rolls:

  • Allow the mixture to cool slightly.
  • Take small portions and shape them into rolls.

Coat with coconut:

  • Roll each piece in the remaining desiccated coconut to coat evenly.

Chill:

  • Place the rolls in the refrigerator for about 15–20 minutes to set.

Serve:

  • Serve chilled as a sweet snack or dessert.

Notes

Pro Tips:
✔ Add extra milk if the dates are dry to keep the mixture soft.
✔ Use fresh desiccated coconut for better flavor.
✔ Chop nuts finely for even texture.
✔ Store in an airtight container in the refrigerator for up to 5–6 days.
