Egg Roll & Beef Roll

Egg rolls are a ubiquitous feature of American Chinese cuisine are often served as free additions to American Chinese combination platters throughout the United States, along with fried rice and fortune cookies.

- 1/2 kilogram(kg) minced beef OR lamb
- 3 boiled eggs(or an omelete of 3 eggs)
- 1 onion,minced
- ground green chillies to taste
- 1 tablespoon(tbsp) breadcrumbs
- Salt to taste
- 1 teaspoon(tsp) ginger paste
- 1 teaspoon(tsp) garlic paste
- 1 tablespoon(tbsp) chopped coriander leaves
- 1/2 teaspoon(tsp) garam masala powder
- 3-4 tablespoon(tbsp) oil
- 6 medium sized potatoes
- 1 sheet greaseproof paper
- 1 tablespoon(tbsp) ghee or margarine
- 1 tablespoon(tbsp) oil
- 3 chopped onions
- 6 grated tomatoes
- 1 tablespoon(tbsp) tomato puree
- 2 tablespoon(tbsp) tomato sauce
- HP sauce,Lea & Perrins sauce
- salt ,pepper to taste
- Red chilli powder to taste
- 1/2 cup water
Add minced onion, green chillies. breadcrumbs. salt. ginger, garlic, coriander leaves and garam masala to the minced meat and mix well
Spread a little oil on the greaseproof paper and pat the minced meat mixture on it
Place the eggs along the length of the flattened meat and roll up, if using omelette, spread the omelette on meat and roll
Brush oil on the roll and wrap in greaseproof paper
Put In an oven-proof dish
Peel and salt the potatoes and place on the side of roll
Brush oil on them, put the dish in an oven and bake at 180°C for 1 hour or until the potatoes are cooked
Check to see if the roll is cooked with a cocktail stick (it can be fried as well)
Prepare Gravy:
Put the ghee or margarine in a saucepan together with oil
Fry the chopped onions till golden brown
Add the tomatoes ,tomato puree, sauces, salt,pepper and cook for a while
Keep adding a little water until the gravy is blended
When the gravy is cooked (should be slightly runny), pour onto the roll (after removing the greaseproof paper)and cook in oven for a further 10-15 minutes
Serve with vegetables and saladN.B. If tomatoes are not enough add a little yoghurt to give extra gravy and taste.
