Juggu Cake

Jugu cake (the word “Jugu” means peanut in Kiswahili) is an East African and Indian cross-over similar to biscotti, but chewier and denser.

Ingredients
  

  • 2 cup peanuts,slighlty roasted and ground
  • 15 cup (brown or white) flour
  • 2 cup sugar
  • 5 teaspoons(tsp) baking powder
  • 1/2 cup oil
  • 2 eggs
  • 1/2 cup milk(to bind)
  • 1 teaspoon(tsp) vanilla essence

Instructions
 

  • Bind all ingredients together with milk into a stiff dough, leaving one egg yolk for glacing
  • Press the mixture onto a greased tin, flattening the mixture completely
  • Beat the egg yolk and brush onto the mixture
  • Cut into squares or diamonds before putting in the oven at 160°C (Gas Mark 3 or 325°F) for one hour or until brown
  • Remove from the oven and separate the pieces immediately
