Jugu cake (the word “Jugu” means peanut in Kiswahili) is an East African and Indian cross-over similar to biscotti, but chewier and denser.

- 2 cup peanuts,slighlty roasted and ground
- 15 cup (brown or white) flour
- 2 cup sugar
- 5 teaspoons(tsp) baking powder
- 1/2 cup oil
- 2 eggs
- 1/2 cup milk(to bind)
- 1 teaspoon(tsp) vanilla essence
Bind all ingredients together with milk into a stiff dough, leaving one egg yolk for glacing
Press the mixture onto a greased tin, flattening the mixture completely
Beat the egg yolk and brush onto the mixture
Cut into squares or diamonds before putting in the oven at 160°C (Gas Mark 3 or 325°F) for one hour or until brown
Remove from the oven and separate the pieces immediately
