Ingredients
  

  • 1/2 Cup Rice
  • 2 pints fresh milk
  • 1/2  condensed sweetened milk 
  • 1/2 teaspoon nutmeg
  • 1 pinch Saffron
  • Sugar to taste
  • A little butter
  • Coarsely ground almonds and pistachios

Instructions
 

  • Rub rice with a dab of butter
  • Boil the rice in 2 cups water, and mash
  • Leave aside 2 tablespoons of milk and add the sweetened milk, rice mixture, saffron and nutmeg to the remaining milk and cook over low heat, stirring continuously until about a third of the milk has evaporated
  • In a separate saucepan caramelise 2 tablespoons of sugar, stir in 2 tablespoons of milk, and add to the kheer (taste for sweetness)
  • Serve warm or cold, decorated with coarsely ground almonds and pistachios
