- 1/2 Cup Rice
- 2 pints fresh milk
- 1/2 condensed sweetened milk
- 1/2 teaspoon nutmeg
- 1 pinch Saffron
- Sugar to taste
- A little butter
- Coarsely ground almonds and pistachios
Rub rice with a dab of butter
Boil the rice in 2 cups water, and mash
Leave aside 2 tablespoons of milk and add the sweetened milk, rice mixture, saffron and nutmeg to the remaining milk and cook over low heat, stirring continuously until about a third of the milk has evaporated
In a separate saucepan caramelise 2 tablespoons of sugar, stir in 2 tablespoons of milk, and add to the kheer (taste for sweetness)
Serve warm or cold, decorated with coarsely ground almonds and pistachios
