Pakwan

The people of village are very simple in thought and behavior. They are therefore very friendly and helpful. Whenever they celebrate a festival, they dance and sing together and cook small sized cookies called Pakwan, Goggi or methi tikkia.

- 1 Cup flour
- 3 Tablespoons(tbsp) melted butter/ghee
- Water
- Pinch of Salt
- If coloring the dough
- 1-2 drops of pink food color
- Tablespoons(tbsp) 1-2 drops of green food color
- 1 Cup sugar
- 1/2 Cup water
- a couple strands of saffron/kesar
- a few drops of lemon juice
- Make chasni to make one strand
- 4 Tablespoons(tbsp) custard powder
- 4 Tablespoons(tbsp) Oil
- Oil to Fry
- nuts to garnish
- Desiccated coconut to garnish
Make the dough by binding the flour, butter, salt and water.
Slowly add the water till you have a smooth dough that is not sticky.
If you would like the pakwan to have multiple colors, divide the dough into 3 parts and color one with pink food color and another with green food color. It will have a marbled effect. Leave the other dough white.
Make small balls of dough, of each color. Roll out into small 4″ discs (like roti)
Layer alternate colors, putting the custard paste in between each layer
Then roll out into a bigger disc, about 3 mm thickRoll into a swiss roll, cut into piecesThen flatten each piece into a 2-3 inch disc
