Seero( Sheera)is also known as Suji ka halwa is a type of halvah made by toasting common-wheat semolina in a fat like ghee or oil, and adding a sweetener like sugar syrup or honey.

Ingredients
  

  • 250 grams coarse semolina
  • 250 grams sugar
  • 250 grams butter
  • 1 pint milk
  • 1/2 evaporated milk
  • 25 grams sultanas
  • 75 grams coarsely ground almonds and pistachios
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon nutmeg (optional)
  • good pinch of saffron

Instructions
 

  • Melt butter in a saucepan over medium heat (making sure it does not burn)
  • As the butter starts to bubble, add the semolina, stirring continuously and cook over a low heat until the semolina turns light brown and fluffy
  • Add the milk gradually and mix well
  • Add the remaining ingredients (reserving some almonds and pistachios for decorating) and mix well
  • Cook in the oven at 160°C (Gas Mark 3 or 325°F) for 20 minutes 6 Decorate with the nuts
