Seero( Sheera)is also known as Suji ka halwa is a type of halvah made by toasting common-wheat semolina in a fat like ghee or oil, and adding a sweetener like sugar syrup or honey.

- 250 grams coarse semolina
- 250 grams sugar
- 250 grams butter
- 1 pint milk
- 1/2 evaporated milk
- 25 grams sultanas
- 75 grams coarsely ground almonds and pistachios
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon nutmeg (optional)
- good pinch of saffron
Melt butter in a saucepan over medium heat (making sure it does not burn)
As the butter starts to bubble, add the semolina, stirring continuously and cook over a low heat until the semolina turns light brown and fluffy
Add the milk gradually and mix well
Add the remaining ingredients (reserving some almonds and pistachios for decorating) and mix well
Cook in the oven at 160°C (Gas Mark 3 or 325°F) for 20 minutes 6 Decorate with the nuts
