Shrikhand (probiotic) when eaten with deep fried poori, is a meal with low glycemic index. Also, since fat is important for feeling of satiety, it reduces chances of overeating. This simple meal isĀ healthy and safe for all, including people with obesity, diabetes or heart disease.

- 1,1/2 kilogram curd cheese
- 1 pint thick full cream yoghurt
- Sugar to taste
- 1 teaspoon ground nutmeg
- Coarsely ground almonds and pistachios for decorating
- 1/2 teaspoon ground cardamom
- 75 grams coarsely ground almonds and pistachios
- 1/2 teaspoon ground cardamomĀ
- 1 pinch saffron
Sieve the curd cheese and yoghurtthrough a large metal sieve stirring with a wooden spoon. This process allows air in and makes the shrikhand light and fluffy
Add sugar, nutmeg and cardamom and stir well (taste for sweetness)
Pour into a serving bowl and decorate with saffron and nuts
N.B. An alternative method is to liquidise all the ingredients except nuts and saffron at medium speed for 3-4 minutes (replacing steps 2 and 3)
