Vegetable Kachori

Vegetable Kachori is a yummy snack dish made by stuffing a mix of veggies and spices cooked and stuffed in the kachori; they are then deep fried until golden in colour.

Ingredients
  

  • 375 grams 375 grams peas 
  • 1/4 kilogram carrots,cut into very small pieces
  • 1/4 kilogram potatoes,cut into very small pieces 
  • 1/4 kilogram white cabbage,finely shredded
  • 1 teaspoon mustard seeds
  • 4 tablespoon oil
  • 1/2 teaspoon garam masala powder
  • 1 teaspoon salt
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon turmeric
  • 1,1/2 teaspoon sugar
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1-2 tablespoon coriander leaves,chopped
  • 2-3  green chillies,ground
  • Pastry ingredients as for daal kachori recipe
  •  oil for frying

Instructions
 

  • Heat the oil in a saucepan. Add the mustard seeds
  • When the seeds pop, add the diced vegetables, garlic, ginger and green chilliesStir and add a little water
  • Cover and cook over medium heat for approximately 15 minutes, stirring occasionally
  • Add all the remaining ingredients and mix well 
  • Now follow instructions 8-13trom Daal Kachori
  • Serve with lemon wedges ortamarind chutney
