Vegetable Kachori is a yummy snack dish made by stuffing a mix of veggies and spices cooked and stuffed in the kachori; they are then deep fried until golden in colour.

- 375 grams 375 grams peas
- 1/4 kilogram carrots,cut into very small pieces
- 1/4 kilogram potatoes,cut into very small pieces
- 1/4 kilogram white cabbage,finely shredded
- 1 teaspoon mustard seeds
- 4 tablespoon oil
- 1/2 teaspoon garam masala powder
- 1 teaspoon salt
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon turmeric
- 1,1/2 teaspoon sugar
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1-2 tablespoon coriander leaves,chopped
- 2-3 green chillies,ground
- Pastry ingredients as for daal kachori recipe
- oil for frying
Heat the oil in a saucepan. Add the mustard seeds
When the seeds pop, add the diced vegetables, garlic, ginger and green chilliesStir and add a little water
Cover and cook over medium heat for approximately 15 minutes, stirring occasionally
Add all the remaining ingredients and mix well

Serve with lemon wedges ortamarind chutney
