
Falooda
A creamy milk dessert set with agar-agar, lightly flavored with vanilla and popular in East African and Indian-style falooda preparations.
Ingredients
- 1 tin carnation milk
- 1/2 cup cup whipping cream
- 1 cup fresh milk
- 1/2 tin condensed milk
- 1 tsp vanilla essence
- 2 tsp agar-agar powder
- Food colour of your choice
Instructions
Prepare the milk mixture:
- In a saucepan combine Carnation milk, whipping cream, fresh milk, condensed milk, and vanilla essence.
- Mix well.
Heat the mixture:
- Place the pan on medium heat and bring the mixture to a gentle boil while stirring.
Prepare the agar mixture:
- In a small bowl mix agar-agar powder with 2 tablespoons of milk and stir well until smooth.
Combine agar with milk:
- Remove the milk mixture briefly from heat and add the prepared agar mixture.
- Stir well.
Cook again:
- Return the pan to the stove and boil on medium heat for about 2 minutes, stirring continuously.
Add colour and set:
- Add a few drops of food colour and mix.
- Pour the mixture into a large bowl or small serving bowls.
Chill:
- Place in the refrigerator until fully set and chilled before serving.
Notes
Pro Tips:
✔ Stir continuously while heating to prevent the milk from sticking.
✔ Dissolve agar-agar well to avoid lumps.
✔ Adjust condensed milk depending on your sweetness preference.
✔ Chill for at least 2 hours for a firm texture.
✔ Serve cold as part of a traditional falooda dessert.
