Ingredients
  

  • 1 cup besan (gram flour)
  • 1 large onion thinly sliced
  • 1-2 potatoes thinly sliced (optional)
  • 1-2 green chillies finely chopped
  • 2 tbsp fresh coriander chopped
  • 1 tsp cumin seeds
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • salt to taste
  • 1/2 tsp baking powder
  • water as needed
  • oil for deep frying

Instructions
 

Prepare vegetables:

  • Place sliced onions and potatoes in a bowl.
  • Sprinkle salt and lightly rub to release moisture.

Make batter:

  • Add besan, green chillies, coriander, cumin seeds, spices, and baking powder.
  • Mix well.
  • Add water gradually to form a thick, sticky batter.

Heat oil:

  • Heat oil on medium heat until hot but not smoking.

Fry bhajias:

  • Drop spoonfuls of batter into hot oil.
  • Fry in batches, turning occasionally until golden brown and crispy.

Drain:

  • Remove and place on paper towel to absorb excess oil.

Serve:

  • Serve hot with mint chutney, tamarind chutney, or ketchup with green chilli sauce.

Notes

✔ Keep batter thick for crispy texture.
✔ Fry on medium heat for even cooking.
✔ Add a little rice flour for extra crunch.
