
Bhajias
Crispy golden fritters made with gram flour, onions, and spices, perfect for tea-time snacking or as a savoury starter.
Ingredients
- 1 cup besan (gram flour)
- 1 large onion thinly sliced
- 1-2 potatoes thinly sliced (optional)
- 1-2 green chillies finely chopped
- 2 tbsp fresh coriander chopped
- 1 tsp cumin seeds
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric
- 1 tsp ground coriander
- 1/2 tsp garam masala
- salt to taste
- 1/2 tsp baking powder
- water as needed
- oil for deep frying
Instructions
Prepare vegetables:
- Place sliced onions and potatoes in a bowl.
- Sprinkle salt and lightly rub to release moisture.
Make batter:
- Add besan, green chillies, coriander, cumin seeds, spices, and baking powder.
- Mix well.
- Add water gradually to form a thick, sticky batter.
Heat oil:
- Heat oil on medium heat until hot but not smoking.
Fry bhajias:
- Drop spoonfuls of batter into hot oil.
- Fry in batches, turning occasionally until golden brown and crispy.
Drain:
- Remove and place on paper towel to absorb excess oil.
Serve:
- Serve hot with mint chutney, tamarind chutney, or ketchup with green chilli sauce.
