Cabbage and Carrot Sambharo Recipe is a traditional warm salad of sorts typically prepared in Gujarat. The unique thing about this salad is the vegetables are lightly stir fried but not cooked soft.
They remain mildly crunchy, and are usually had along with papdi, dhokla, fafda and other popular Gujarati snacks. Sometimes it is also made with just carrots, or with the addition of raw papaya or capsicum.
Cabbage Carrot Chilli Sambha

Ingredients
- 375 grams(g) green cabbage
- 375 grams(g) carrots
- 10 green chillies
- 4 Tablespoon(tbsp) oil
- 1 whole red chilli,cut into 2 and deseeded
- 1,1/4 Teaspoon(tsp) salt
- 3/4 Teaspoon(tsp) sugar
- 1/2 Teaspoon(tsp) fenugreek seeds
- 1/2 Teaspoon(tsp) mustard seeds
- 1 Tablespoon(tbsp) lemon juice
- pinch of turmeric
- 1 Teaspoon(tsp) coarsely ground cumin seeds
- 6-7 curry leaves(limbdo)
- 1 Teaspoon(tsp) gram flour
- 1 Teaspoon(tsp) cold water
Instructions
- Core the cabbage and cut it into fine, long shreds. Peel the carrots and cut into thin, long slices. Cut the green chillies into thin long strips
- Heat the oil in a wide mouthed saucepan over a medium high flame. When hot, put in the fenugreek seeds. A second or two later, put in the mustard seeds
- As soon as the mustard seeds begin to pop, put in the dry red chilli and curry leaves
- Add the cabbage, carrots and the green chillies. Turn the heat down to low and stir the vegetables
- Add the salt, sugar, cumin seeds, gram flour paste and a little turmeric and mix well
- Cook for a few minutes only
- Do not add any water. The vegetables must only be half cooked. Remove from heat
- Add the lemon juice and leave to cool
