Maru Bhajia Chutney

Ingredients
  

  • 1/2 cup cucumber chopped (about half a cucumber)
  • 1/2 cup tomatoes chopped (about one large tomato)
  • 1/2 carrot chopped (about one carrot)
  • 3 tbsp cilantro (coriander leaves and stalks) chopped
  • 2 green chilies chopped
  • 1 tbsp lemon juice
  • 1 tsp ginger grated
  • 1/2 tsp cumin (jeera) powder
  • 1 tsp sugar
  • 1 tsp salt (adjust to taste)

Instructions
 

Prepare the ingredients:

  • Chop cucumber, tomatoes, carrots, cilantro, and green chilies into small pieces.

Blend the chutney:

  • Add all ingredients into a blender or food processor.

Pulse to texture:

  • Pulse briefly until the mixture forms a salsa-style rough chutney.
  • Do not overblend.

Store and serve:

  • Transfer the chutney to an airtight container and refrigerate until ready to serve.
