Banana Fritters / Vitumbua Ndizi

Ingredients
  

  • 4 ripe plantains
  • cups self-raising flour or plain flour with 1½ tsp baking powder
  • 2 tbsp sugar
  • 1/3 cup milk
  • 1/3 cup coconut milk
  • 1 egg
  • Roughly ground cardamom
  • Oil for deep frying

Instructions
 

Prepare the batter:

  • In a bowl mix flour, sugar, cardamom, milk, coconut milk, and egg to make a thick batter.
  • Cover and let it rest for about 1 hour.

Check batter consistency:

  • The batter should be thick enough to coat the banana pieces completely.
  • If too thin, add a little flour.
  • If too thick, add a small amount of milk.

Prepare the plantains:

  • Peel the plantains and cut them into 3–4 pieces.
  • Slice each piece lengthwise into 2–3 thinner pieces.

Fry the fritters:

  • Heat oil in a deep pan.
  • Dip each plantain slice into the batter, ensuring it is fully coated, then carefully place it in the hot oil.

Cook until golden:

  • Fry on medium heat until the fritters turn golden brown and crispy.
  • Remove and place on paper towels to drain excess oil.
