Indian Chicken Curry (Classic Homestyle)

Ingredients
  

  • 500 grams chicken (bone-in preferred)
  • 2 medium onions finely chopped
  • 2 medium tomatoes pureed or chopped
  • 1 tbsp ginger-garlic paste
  • 2 tbsp oil
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp tsp cumin powder
  • 1 tsp garam masala
  • salt to taste
  • 1 – 1 1/2 cups hot water
  • Fresh coriander leaves

Instructions
 

Sauté onions:

  • Heat oil in a kadai or deep pan.
  • Add chopped onions and sauté until golden brown.

Add aromatics:

  • Add ginger-garlic paste and cook until the raw smell disappears.

Cook masala:

  • Add tomatoes, turmeric, chilli powder, coriander powder, and cumin powder.
  • Cook until oil separates from the masala.

Add chicken:

  • Add chicken and salt.
  • Mix well and cook on medium heat for 5–7 minutes until the chicken changes color.

Simmer:

  • Add hot water, cover, and cook on low heat for 20–25 minutes until chicken is tender.

Finish:

  • Sprinkle garam masala and simmer for 2–3 minutes.

Serve:

  • Garnish with fresh coriander and serve hot.
  • Serve With –
    Steamed basmati rice
    Jeera rice
    Chapati or roti
    Paratha

Optional Additions:

  • Add coconut milk for a South Indian style.
  • Add beaten curd for a richer North Indian version.
  • Add potatoes for a homestyle variation.
