Chili Garlic Sauce

Ingredients
  

  • 200 grams fresh red chilies chopped
  • 1 cup garlic cloves
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 2 tbsp sugar
  • 1 tsp salt
  • 1 tbsp soy sauce
  • 1 tsp red chili flakes
  • 3 tbsp oil
  • 1 tsp cornstarch + 1 tbsp water (optional)

Instructions
 

Blend:

  • Add red chilies, garlic, vinegar, and water to a blender.
  • Blend to a slightly coarse texture.

Cook:

  • Heat oil in a pan on medium flame.
  • Pour the blended mixture carefully and cook for 4–5 minutes until slightly thick.

Season:

  • Add sugar, salt, soy sauce, and chili flakes.
  • Cook for another 2–3 minutes.

Thicken:

  • Add cornstarch slurry if needed.
  • Cook for 1 minute until glossy and thick.

Cool and store:

  • Let the sauce cool completely.
  • Transfer to an airtight jar and refrigerate.
