Alexandrian Hegazeya

Ingredients
  

For the Dough:

  • 500 grams all-purpose flour
  • 250 grams melted ghee
  • 80 grams powdered sugar
  • 1 egg
  • 2 grams vanilla
  • 5 grams baking powder
  • a pinch of salt

For the Filling:

  • 400 grams date paste (ajwa)
  • 100 grams crushed walnuts
  • 100 grams crushed hazelnuts or peanuts
  • 3 grams cinnamon

For the Top:

  • 1 egg (beaten)
  • sesame seeds for sprinkling

Instructions
 

Prepare dry ingredients:

  • In a bowl, mix flour, baking powder, and salt.

Add ghee and sugar:

  • Add melted ghee and powdered sugar; rub well until the mixture resembles crumbs.

Form dough:

  • Add egg and vanilla, then gently bring the dough together without over-kneading.

Divide dough:

  • Divide the dough into two equal portions.

Base layer:

  • Press the first portion evenly into a greased baking pan.

Prepare filling:

  • Mix date paste, walnuts, hazelnuts or peanuts, and cinnamon until well combined.

Add filling:

  • Spread the filling evenly over the base layer.

Top layer:

  • Cover with the second portion of dough and press lightly to seal.

Finish top:

  • Brush with beaten egg and sprinkle sesame seeds.

Baking:

  • Bake in a preheated oven at 180°C for 35–40 minutes until golden brown.
  • Allow it to cool completely before slicing.
