Ingredients
For the Dough:
- 500 grams all-purpose flour
- 250 grams melted ghee
- 80 grams powdered sugar
- 1 egg
- 2 grams vanilla
- 5 grams baking powder
- a pinch of salt
For the Filling:
- 400 grams date paste (ajwa)
- 100 grams crushed walnuts
- 100 grams crushed hazelnuts or peanuts
- 3 grams cinnamon
For the Top:
- 1 egg (beaten)
- sesame seeds for sprinkling
Instructions
Prepare dry ingredients:
- In a bowl, mix flour, baking powder, and salt.
Add ghee and sugar:
- Add melted ghee and powdered sugar; rub well until the mixture resembles crumbs.
Form dough:
- Add egg and vanilla, then gently bring the dough together without over-kneading.
Divide dough:
- Divide the dough into two equal portions.
Base layer:
- Press the first portion evenly into a greased baking pan.
Prepare filling:
- Mix date paste, walnuts, hazelnuts or peanuts, and cinnamon until well combined.
Add filling:
- Spread the filling evenly over the base layer.
Top layer:
- Cover with the second portion of dough and press lightly to seal.
Finish top:
- Brush with beaten egg and sprinkle sesame seeds.
Baking:
- Bake in a preheated oven at 180°C for 35–40 minutes until golden brown.
- Allow it to cool completely before slicing.
