
Banana Fritters / Vitumbua Ndizi
Ingredients
- 4 ripe plantains
- 1½ cups self-raising flour or plain flour with 1½ tsp baking powder
- 2 tbsp sugar
- 1/3 cup milk
- 1/3 cup coconut milk
- 1 egg
- Roughly ground cardamom
- Oil for deep frying
Instructions
Prepare the batter:
- In a bowl mix flour, sugar, cardamom, milk, coconut milk, and egg to make a thick batter.
- Cover and let it rest for about 1 hour.
Check batter consistency:
- The batter should be thick enough to coat the banana pieces completely.
- If too thin, add a little flour.
- If too thick, add a small amount of milk.
Prepare the plantains:
- Peel the plantains and cut them into 3–4 pieces.
- Slice each piece lengthwise into 2–3 thinner pieces.
Fry the fritters:
- Heat oil in a deep pan.
- Dip each plantain slice into the batter, ensuring it is fully coated, then carefully place it in the hot oil.
Cook until golden:
- Fry on medium heat until the fritters turn golden brown and crispy.
- Remove and place on paper towels to drain excess oil.
