
Chili Garlic Sauce
A bold, spicy, and tangy homemade sauce packed with garlic and red chilies, perfect for enhancing Indo-Chinese dishes.
Ingredients
- 200 grams fresh red chilies chopped
- 1 cup garlic cloves
- 1/2 cup white vinegar
- 1/4 cup water
- 2 tbsp sugar
- 1 tsp salt
- 1 tbsp soy sauce
- 1 tsp red chili flakes
- 3 tbsp oil
- 1 tsp cornstarch + 1 tbsp water (optional)
Instructions
Blend:
- Add red chilies, garlic, vinegar, and water to a blender.
- Blend to a slightly coarse texture.
Cook:
- Heat oil in a pan on medium flame.
- Pour the blended mixture carefully and cook for 4–5 minutes until slightly thick.
Season:
- Add sugar, salt, soy sauce, and chili flakes.
- Cook for another 2–3 minutes.
Thicken:
- Add cornstarch slurry if needed.
- Cook for 1 minute until glossy and thick.
Cool and store:
- Let the sauce cool completely.
- Transfer to an airtight jar and refrigerate.
