
Coffee Fudge Pudding
Ingredients
- 1 cup cake flowe
- 1 cup flour
- 1 tbsp cocoa powder
- 1 tbsp baking powder
- Pinch of Salt
- 2 tbsp butter melted
- 1 large egg
- 1 tsp vannila essence
- 1/2 cup milk
- 1 tbsp strong instant coffee dissolved in 2 tbsp hot water
For the fudge sauce
- 1 cup brown sugar
- 2 tbsp cocoa powder
- 1 tbsp instant coffee
- 1/2 cup boiling water
Instructions
- Preheat oven to 180°C. Grease a medium ovenproof dish.
- Add sugar and mix.
- In another bowl, whisk egg, melted butter, vanilla, milk, and dissolved coffee.
- Combine wet and dry ingredients. Mix until smooth.
- Pour batter into prepared dish.
- Prepare the sauce:Mix brown sugar, cocoa, and instant coffee together.Sprinkle evenly over the batter (do not stir).
- Add boiling water:Carefully pour boiling water over the back of a spoon onto the mixture.Do not mix — it will look very watery (that’s correct).Bake for 35–40 minutes until the top is set but slightly soft in the centre.
