Coffee Fudge Pudding

Ingredients
  

  • 1 cup cake flowe
  • 1 cup flour
  • 1 tbsp cocoa powder
  • 1 tbsp baking powder
  • Pinch of Salt
  • 2 tbsp butter melted
  • 1 large egg
  • 1 tsp vannila essence
  • 1/2 cup milk
  • 1 tbsp strong instant coffee dissolved in 2 tbsp hot water

For the fudge sauce

  • 1 cup brown sugar
  • 2 tbsp cocoa powder
  • 1 tbsp instant coffee
  • 1/2 cup boiling water

Instructions
 

  • Preheat oven to 180°C. Grease a medium ovenproof dish.
  • Add sugar and mix.
  • In another bowl, whisk egg, melted butter, vanilla, milk, and dissolved coffee.
  • Combine wet and dry ingredients. Mix until smooth.
  • Pour batter into prepared dish.
  • Prepare the sauce:
    Mix brown sugar, cocoa, and instant coffee together.
    Sprinkle evenly over the batter (do not stir).
  • Add boiling water:
    Carefully pour boiling water over the back of a spoon onto the mixture.
    Do not mix — it will look very watery (that’s correct).
    Bake for 35–40 minutes until the top is set but slightly soft in the centre.
  • To Serve
    Serve warm with:
    Custard
    Vanilla ice cream
    Or fresh cream
