Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 cup warm water
  • 1 tbsp active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil

Instructions
 

Activate yeast:

  • In a bowl mix warm water, sugar, and yeast.
  • Let it rest for 3–5 minutes until frothy.

Mix dry ingredients:

  • In a large bowl combine flour and salt.
  • Add olive oil and mix.

Form the dough:

  • Pour the yeast mixture into the flour and mix to form a rough dough.

Knead:

  • Transfer to a surface and knead for 5–8 minutes until smooth and soft.
  • The dough should bounce back when pressed.

First rise:

  • Place the dough in a greased bowl, cover, and let it rise for about 1 hour until doubled.

Shape:

  • Punch down the dough and knead lightly for 2 minutes.
  • Divide into 4 equal portions and shape into long logs.

Second rise:

  • Place on a baking tray, cover, and let rise again for about 30 minutes until puffy.

Bake:

  • Preheat oven to 180°C.
  • Brush with olive oil and bake for about 25 minutes until golden brown.

Cool and serve:

  • Remove from oven, brush lightly with oil, cover with a cloth, and let cool.
  • Slice and fill as desired.
