Gajar ka halwa, also known as gajorer halua, gajrela, gajar pak, and carrot halwa is a carrot-based sweet dessert pudding from the Indian subcontinent. It is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar, cardamom and then cooking while stirring regularly. It is loaded with protein, vitamins A, B1, B2, B12, and D, as well as potassium, calcium and magnesium.

Carrot Halwa
Ingredients
- 1,1/4 kilograms carrots,grated
- 1 evaporated milk
- 1/2 pint milk
- 1 cup full cream milk powder
- 250 grams sugar
- 1/4 teaspoons cardamom seeds
- 3/4 teaspoons cardamom powder
- 1 teaspoon nutmeg
- 75 grams butter
- 1/4 cup oil
- 1 gram (1tsp) saffron
- 100 grams slivered almonds and pistachios coarsely ground almonds and pistachios for decorating
Instructions
- Heat the butter and oil in a fairly large saucepan
- When hot, add cardamom seeds and as they sizzle put in the carrots
- Stir and cook for about 10 minutes
- Add the fresh milk and the tinned milk and cook on medium heat for about 20 minutes
- Add saffron and milk powder. Cook until all the milk is absorbed
- Add sugar and cook on a low heat giving an occasional stir
- When it is dry and thick and leaves the sides of the saucepan, add ground cardamom, nutmeg, slivered almonds and pistachios and mix well
- Put in a serving dish and sprinkle coarsely ground almonds and pistachios
- Serve hot or cold
