One of the most loved Indian snacks, Dal kachori is absolutely sensational. Kachoris are deep fried breads made with ground dal sauteed along with spices and filled into a cover of maida and baking powder. This is the most popular road side snack that you’ll find across north India, specially parts of Rajasthan. 

Kachoris have a number of varieties, most popular ones being Khasta kachori and Dal kachori. Super crisp, flaky and utterly delicious, kachoris are the ultimate snack or mid day meal that you just won’t be able to resist!

Ingredients
  

  • 1 Cup Moong daal, skinned 100 gms mashed potatoes
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 3-4 whole cloves
  • 2 tablespoons lemon juice
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon garlic paste
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon sugar
  • 1/4 teaspoon turmeric
  • 1 teaspoon salt
  • 5 stalks of coriander leaves, chopped
  • 1/2 kilogram plain flour (for pastry)
  • 1 cup oil (for pastry)
  • 1 cup water (for pastry)
  • 1/2 teaspoon salt (for pastry)
  • 1/2 teaspoon bicarbonate of soda (for pastry)

Instructions
 

  • Soak the daal for 3 hours
  • Wash and drain the daal ensuring that all the grit has been removed
  • Heat the oil. Fry the cloves and mustard seeds until they pop
  • Add the washed daal and fry for a few minutes
  • Mix in the remaining ingredients together with 2 cups of water
  • Cook on low heat until the daal is cooked
  • Prepare the mashed potatoes and mix with the daal
  • Prepare pastry - mix all ingredients into a dough. Knead well
  • Divide into 35 equal portions (roll out each portion as for rotli but smaller)
  • Place 1 tablespoon of the cooked daal mixture in the centre
  • Fold the pastry over the mixture and pinch to seal
  • Deep fry in hot oil over medium heat until golden brown
  • Drain onto kitchen paper
  • Serve with lemon wedges or tamarind chutney
