Mayai is eggs in swahilli, dungri is onions in Kutchi, this is a traditional family recipe. We usually have it as a light supper or lunch. Not breakfast, but hey anything goes!

Mayai Dungri nu Saag is eaten as a light dinner, since it is a lot like scrambled eggs, I guess it could be eaten for breakfast too.

Ingredients
  

  • 2 tablespoon(tbsp) oil
  • 1/2 kg onion,chopped
  • 4 eggs, beaten
  • 1 large fresh tomato or
  • 1/4 tin peeled tomatoes,chopped
  • 1 teaspoon(tsp) level coriander/cumin powder
  • 1/4 teaspoon(tsp) turmeric
  • 1/4 teaspoon(tsp) red chilli powder
  • 1/2 teaspoon(tsp) garlic paste
  • 1 tablespoon(tbsp) finely chopped coriander leaves or spring onions,chopped
  • salt to taste

Instructions
 

  • Heat the oil
  • Fry the onions until translucent. Do not brown
  • Add tomatoes, salt and spices and stir well for 5-10 minutes
  • Reduce heat. Add the eggs, stirring all the time
  • When the eggs have blended well and the consistency is dry, add the coriander leaves or spring onions and remove from the heat
  • Serve immediately with rotlis or khichri
