Vermicelli is made from refined flour or rice. Vermicelli is similar in appearance to noodles but is much thinner. They are a form of rice noodles. They are often referred to as rice noodles or rice sticks. There are two main types of vermicelli: Italian (just plain “vermicelli”) and Asian(aka “rice vermicelli”). But there are some other specific ways to separate these strands too.

Ingredients
- 2 cups broken roasted fine vermicelli
- 1 cup sugar
- 5 strands of saffron
- 1/4 teaspoon cardamom seeds
- 25 grams sultanas (optional)
- 25 grams almonds, slivered
- 25 grams pistachios, slivered
- 1/2 cup oil
- 2 cups water
Instructions
- Heat the sugar, cardamom and saffron in
- cups of water and leave the syrup aside
- In a saucepan fry the vermicelli in the oil very gently until golden brown
- Add the sultanas and syrup which gets immediately absorbed
- Put into theoven for 10 minutes on 160°C (Gas Mark 3 or 325°F) until sev is dry and loose
- Garnish with the almonds and pistachios before serving
