Kheer, also called payasam, a chilled South Asian dessert made from slow-cooked rice, milk, and sugar, much like a rice pudding. It is typically flavoured with saffron, cardamom, raisins, and/or various nuts, notably pistachios, cashews, and almonds. “A sweet milky dessert, to be eaten cold, made either with corn-flour or rice flour or sometimes both, and usually flavoured with rose water and/or ground cardamom.

Ingredients
- 1/2 Cup Rice
- 2 pints fresh milk
- 1/2 condensed sweetened milk
- 1/2 teaspoon nutmeg
- 1 pinch Saffron
- Sugar to taste
- A little butter
- Coarsely ground almonds and pistachios
Instructions
- Rub rice with a dab of butter
- Boil the rice in 2 cups water, and mash
- Leave aside 2 tablespoons of milk and add the sweetened milk, rice mixture, saffron and nutmeg to the remaining milk and cook over low heat, stirring continuously until about a third of the milk has evaporated
- In a separate saucepan caramelise 2 tablespoons of sugar, stir in 2 tablespoons of milk, and add to the kheer (taste for sweetness)
- Serve warm or cold, decorated with coarsely ground almonds and pistachios
