Seero( Sheera)is also known as Suji ka halwa is a type of halvah made by toasting common-wheat semolina in a fat like ghee or oil, and adding a sweetener like sugar syrup or honey. It can be served for breakfast or as a dessert item. The basic recipe is made with just semolina, sugar or honey, ghee, and sometimes milk.
In 14th-century Spain, semolina was cooked with almond milk, oil and optionally saffron for coloring. In India, sheera is made from common wheat semolina (farina), ghee, and sugar; cardamom and milk, almonds and cashew-nuts are added.

Ingredients
- 250 grams coarse semolina
- 250 grams sugar
- 250 grams butter
- 1 pint milk
- 1/2 evaporated milk
- 25 grams sultanas
- 75 grams coarsely ground almonds and pistachios
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon nutmeg (optional)
- good pinch of saffron
Instructions
- Melt butter in a saucepan over medium heat (making sure it does not burn)
- As the butter starts to bubble, add the semolina, stirring continuously and cook over a low heat until the semolina turns light brown and fluffy
- Add the milk gradually and mix well
- Add the remaining ingredients (reserving some almonds and pistachios for decorating) and mix well
- Cook in the oven at 160°C (Gas Mark 3 or 325°F) for 20 minutes 6 Decorate with the nuts
