Shrikhand is a semi soft, sweetish sour, whole milk product prepared from lactic fermented curd. The curd (dahi) is partially strained through a cloth to remove the whey and thus produce a solid mass called chakka (the basic ingredient for Shrikhand).
Shrikhand (probiotic) when eaten with deep fried poori, is a meal with low glycemic index. Also, since fat is important for feeling of satiety, it reduces chances of overeating. This simple meal is healthy and safe for all, including people with obesity, diabetes or heart disease.

Ingredients
- 1,1/2 kilogram curd cheese
- 1 pint thick full cream yoghurt
- Sugar to taste
- 1 teaspoon ground nutmeg
- Coarsely ground almonds and pistachios for decorating
- 1/2 teaspoon ground cardamom
- 75 grams coarsely ground almonds and pistachios
- 1/2 teaspoon ground cardamom
- 1 pinch saffron
Instructions
- Sieve the curd cheese and yoghurtthrough a large metal sieve stirring with a wooden spoon. This process allows air in and makes the shrikhand light and fluffy
- Add sugar, nutmeg and cardamom and stir well (taste for sweetness)
- Pour into a serving bowl and decorate with saffron and nuts
- N.B. An alternative method is to liquidise all the ingredients except nuts and saffron at medium speed for 3-4 minutes (replacing steps 2 and 3)
