Vegetable Kachori is a yummy snack dish made by stuffing a mix of veggies and spices cooked and stuffed in the kachori; they are then deep fried until golden in colour. A very popular Rajasthani snack dish.Kachori can be made and stored for a couple of days in the fridge. With this recipe you can also make kachori chaat.
Serve kachori with tamarind chutney, green chutney or red chili garlic chutney. You can also have these kachori with dubki wale aloo or aloo rasedar. Some curd also goes well with kachori.

Ingredients
- 375 grams 375 grams peas
- 1/4 kilogram carrots,cut into very small pieces
- 1/4 kilogram potatoes,cut into very small pieces
- 1/4 kilogram white cabbage,finely shredded
- 1 teaspoon mustard seeds
- 4 tablespoon oil
- 1/2 teaspoon garam masala powder
- 1 teaspoon salt
- 1/2 teaspoon red chilli powder
- 1/2 teaspoon turmeric
- 1,1/2 teaspoon sugar
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1-2 tablespoon coriander leaves,chopped
- 2-3 green chillies,ground
- Pastry ingredients as for daal kachori recipe
- oil for frying
Instructions
- Heat the oil in a saucepan. Add the mustard seeds
- When the seeds pop, add the diced vegetables, garlic, ginger and green chilliesStir and add a little water
- Cover and cook over medium heat for approximately 15 minutes, stirring occasionally
- Add all the remaining ingredients and mix well
